Our bannetons are perfect for giving support to the dough during the final prove and so giving structure to the final loaf. Our bannetons are available in many shapes, sizes and patterns, giving the final loaf that wonderful artisan look.
Traditionally, proving baskets were made using cane and are still available today although compressed wood pulp baskets are increasingly popular for ecological reasons and for their benefits during use.
Our compressed wood pulp/fibre bannetons are made in Europe using locally sourced materials from managed forests.
Wood pulp bannetons have the ability to absorb heat and moisture from the dough, giving it back as required and so improve the rising of the dough. This is particularly useful to home bakers without proving cabinets. Also, the dough is much less likely to stick compared to cane bannetons and they are much easier to clean.
